Corn and Fritos Salad

Corn and Fritos Salad

Found this tasty little salad online, and we love it. You can whip it up in less than 10 minutes, and it makes a perfect side for burgers.

Corn and Frito Salad

Serves: 12 servings
Total time: 10 minutes

Ingredients
1 can (16 oz) whole kernel sweet corn, drained
1 cup shredded cheddar cheese
½ cup mayonnaise
½ cup orange or green bell pepper, chopped
¼ cup red onion, chopped
½ bag (5 oz) Fritos, broken into pieces
Instructions
  1. Mix together corn, cheddar cheese, mayonnaise, bell pepper, and red onion.
  2. Just before serving, gently fold in the Fritos.
Notes

To break the Fritos into pieces, put them in a baggie and tap lightly with a rolling pin. Does the trick every time!

Be prepared to eat the whole thing. This salad does not make a good leftover; the Fritos tend to get soggy and limp.

The Enloe bookcase I ordered last November finally came, and I've loaded it with some of my favorite books, photos, and other items--all with special meaning and memories. Holders for my collection of Victoria magazines, which are too beautiful to toss, are on order. No more books for me. This bookcase is full. #books #bookcase #bookworm
